Ingredients
Pasta Salad
- 1 pound dried spiral pasta: you can use any short pasta shape that you prefer. You can use gluten free pasta, if needed.
- 1 1/2 cup cherry tomatoes (halved): if using larger tomatoes be sure to dice them into bite size pieces.
- 1 medium cucumber (quartered lengthwise and sliced)
- 1/2 red onion (finely chopped)
- 1/2 cup Greek feta cheese (crumbled)
- 1/2 cup kalamata olives (pitted)
Greek Salad Dressing
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoons lemon juice: fresh squeezed is best.
- 1 teaspoon teaspoon dried oregano
- Salt and pepper (to taste)

Prep!
Set a large pot of salted water over high heat and bring to a boil.
Halve the tomatoes, slice the cucumber, dice the onion and crumble the feta cheese, if needed.
Create!
Cook the pasta according to packet instructions. Drain and set aside to cool.
To assemble the salad, add the cooked, cooled pasta, halved cherry tomatoes, sliced cucumber, chopped red onion, crumbled feta and the kalamata olives to a large salad bowl.
Make the Greek salad dressing by adding red wine vinegar, lemon juice and dried oregano to a small mixing bowl. Slowly drizzle in the olive oil while whisking until well combined and emulsified. Season to taste with salt and pepper.
Drizzle the Greek salad dressing over the salad and toss to combine.
Present!
Divide the salad between 6 bowls or plates, or let guests serve themselves from the main bowl.
Tips and Techniques
- To help stop the pasta sticking together as it cools, stir a drizzle of olive oil through the drained pasta.
- You can add sliced grilled chicken to the salad to make it a complete meal.
