This simple summer salad makes a wonderful side dish at barbecues and cookouts. The crunchy fresh cucumbers and creamy, lemony dressing create a delightful side salad. This delicious homemade dressing is somewhat like the one in Amish Broccoli Salad too.

How To Make Creamy Cucumber Salad

Ingredients

  • Cucumbers
  • Shallot: or red onion.
  • Sour Cream
  • Mayonnaise: make sure it’s a keto-friendly mayonnaise, like Sir Kensington.
  • Sugar Substitute: I use erythritol. If you are not low carb or keto, you can use regular sugar.
  • Lemon: juice and zest.
  • Salt and Pepper
  • Parsley or Dill: optional.

Prep!

Peel the cucumbers, if desired, and thinly slice. Thinly slice the shallots, zest and juice the lemon. Mince the parsley or dill, if using.

Do you need to peel cucumbers? Not necessarily. Conventional cucumbers are often waxed to help prolong their freshness. You should peel these cucumbers. Most others you can leave the skin on for additional nutritional benefits. Some people prefer to peel cucumbers because the skin can cause indigestion and bloating.

Mix together the sour cream, mayonnaise, sweetener, lemon juice and zest. Taste and season with salt and pepper, as needed.
