Greek Pasta Salad

This Greek pasta salad transforms Greek salad into a crowd-pleasing pasta salad. This side dish features pasta combined with pops of cherry tomatoes, refreshing cucumber, creamy feta, and olives. It is finished off with an easy-to-make Greek salad dressing.

Ingredients

Pasta Salad

  • 1 pound dried spiral pasta (gluten free, if needed)
  • 1 1/2 cups cherry tomatoes (halved)
  • 1 medium cucumber (quartered lengthwise and sliced)
  • 1/2 red onion (finely diced)
  • 1/2 cup Greek feta cheese (crumbled)
  • 1/2 cup kalamata olives (pitted)

Greek Salad Dressing

Instructions

  • Cook the pasta according to packet instructions. Drain and set aside to cool.

  • To assemble the salad, add the cooked, cooled pasta, halved cherry tomatoes, sliced cucumber, chopped red onion, crumbled feta and the kalamata olives to a large salad bowl.

  • Make the Greek salad dressing by adding red wine vinegar, lemon juice and dried oregano to a small mixing bowl. Slowly drizzle in the olive oil while whisking until well combined and emulsified. Season to taste with salt and pepper.
    1/4 cup extra virgin olive oil, 2 tablespoons red wine vinegar, 1 tablespoons lemon juice, 1 teaspoon dried oregano, salt, pepper
  • Drizzle the Greek salad dressing over the salad and toss to combine.
  • Divide the salad between 6 bowls or plates, or let guests serve themselves from the main bowl.
