Enjoy these easy to make Layered S’mores Rice Krispie Treats any time of the year!

Summer is here! That means, it’s S’more’s season as well! While I love traditional S’mores, sometimes they aren’t always practical. My go-to alternative are these Layered S’mores Rice Krispie Treats! They can be made ahead of time, and are easy to bring along on all of your summer outings!
I love experimenting with Rice Krispie Treats. While I have seen other S’mores versions of Rice Krispie Treats, I wanted to try to make them more like traditional S’mores with layers! I decided to make a graham cracker crust, then use melted chocolate as the “glue” between the crust and the marshmallow Rice Krispies. It works out great!
Layered S’mores Rice Krispie Treats
Prep!
Preheat your oven to 375° F. Line the bottom of an 8-inch square baking pan with aluminum foil. Finely crushed your graham crackers either in a food processor, or in a zip top bag with a rolling pin. Melt the butter using the microwave and let cool slightly.
Create!
Combine the crushed graham crackers, sugar, and melted butter in a medium bowl. Smash with a fork until everything is moist and then pour into the foil-lined pan. Press down firmly until the graham crackers cover the bottom of the pan evenly. Bake for approximately 7 minutes. Remove from the oven and set aside.
Add chocolate chips to a microwave safe bowl. Microwave on high for 1 minute. Stir and then microwave for 15-second intervals, stirring after each one, until melted and smooth. Pour over the graham cracker crust and spread to evenly cover the crust.
Add the marshmallows and butter to a large microwave safe bowl. Microwave for 1 minute, stir, and then microwave for another 1-2 minutes until melted and smooth. Stir in the Rice Krispies, then pour into the pan on top of the chocolate. Using wet fingers, press the Rice Krispies down firmly and top with extra mini chocolate chips, if desired. Let cool before lifting the foil out and cutting into bars.
Present!
Cut the Layered S’mores Rice Krispie Treats into bars and set out on a pretty pie stand or plate for guests to help themselves. Store in an airtight container in a cool area or the refrigerator.

- 1 10 oz bag marshmallows

- 6 Cups Rice Krispies cereal
- 1/4 Cup mini chocolate chips * optional
