Summer is here! That means it’s S’more’s season as well! While I love traditional S’mores, sometimes they aren’t always practical. My go-to alternative are S’mores Bars made with graham crackers, chocolate, marshmallows and Rice Krispies cereal! They can be made ahead of time, and are easy to bring along on all of your summer outings and events!
Ever since my first Rice Krispie Treats recipe, Chocolate Peanut Butter Rice Krispie Treats, I have loved experimenting with different variations. While I have seen other S’mores Rice Krispie Treats, I wanted to try to make this recipe more like traditional S’mores in layers! The bottom layer is a graham cracker crust, then melted chocolate is used as the “glue” between the crust and the marshmallow Rice Krispies. I throw extra mini chocolate chips on top because, why not? It all works out deliciously!

How to Make S’mores Rice Krispie Treats
Prep!
Preheat your oven to 375° F. Line the bottom of an 8-inch square baking pan with aluminum foil or parchment paper to prevent sticking. Finely crushed your graham crackers either in a food processor, or in a zip top bag with a rolling pin. Melt the butter using the microwave and let cool slightly.
Create!
Combine the crushed graham crackers, sugar, and melted butter in a medium bowl. Smash with a fork until everything is moist and then pour into the foil-lined pan. Press down firmly until the graham crackers cover the bottom of the pan evenly. Bake for approximately 7 minutes. Remove from the oven and set aside.
Add chocolate chips to a microwave safe bowl. Microwave on high for 1 minute. Stir and then microwave for 15-second intervals, stirring after each one, until melted and smooth. Pour over the graham cracker crust and spread to evenly cover the crust.
Add the marshmallows and butter to a large microwave safe bowl. Microwave for 1 minute, stir, and then microwave for another 1-2 minutes until melted and smooth. Stir in the Rice Krispies, then pour into the pan on top of the chocolate.
Using wet fingers, press the Rice Krispies down firmly and top with extra mini chocolate chips, if desired. Let cool before lifting the foil out and cutting into bars.
Present!
Cut the layered S’mores Rice Krispie Treats into bars and set out on a pretty pie stand or plate for guests to help themselves.

Tips and Techniques for the Best S’mores Rice Krispie Treats
- Lining the bottom of your pan with foil will make it much easier to remove the Rice Krispie Treats from the pan. Then you can cut them into bars without damaging your pan with the knife.
- Use wet fingers to push the Rice Krispies mixture into the pan to prevent it from sticking. This method works the best of all the different ones I have tried.

- How do you keep Rice Krispie Treats from sticking to the pan? Line the pan with foil or parchment paper. Once the treats are set, simply lift up the edges of the foil or paper to remove the bars from the pan. Cut into desired shapes.

- 6 cups Rice Krispies cereal
