Not too long ago I made these Chocolate Peanut Butter Crispy Treats for an after dinner treat. They turned out so good that it got the wheels spinning in my head for all kinds of crispy treats recipe ideas! The very first one that came to mind that I just had to make were these Chocolate Covered Strawberry Crispy Treats!
I used dehydrated strawberries that I found near the seeds and other dried fruits section at my local grocery store. I’m actually surprised I found exactly what I was looking for! The strawberries are just like the ones you would find in boxed cereals. You just crumble them up so there is a variety of pieces from dust to small chunks, that way the strawberry flavor gets incorporated all throughout. I wanted to use real fruit and this was the best way I could come up to do that!.
I also decided to mix in crushed chocolate sandwich cookies. I debated between using the cookies or chocolate chips, but decided to go with the cookies so there would be some added cream flavor from the filling. I did end up using chocolate chips though too! All that melted chocolate goodness you see on top of the treats is from melted chocolate chips! I always mix a little milk into the melted chocolate to thin it some to make it easier to drizzle.
This recipe is not hard at all and would be fun to do with kids, although this particular flavor variety is a hit with adults as well! It can be a little messy and sticky to make, but, one tip I found that works really well is to dampen your hands with water before you push the mixture into a baking dish. The treats won’t stick to your hands! This was a huge discovery for me, because trying to get those Chocolate Peanut Butter Crispy Treats in the pan was a mess! Use a smaller pan for thicker treats, like the ones in my photos, or a larger pan for thinner treats!

In a large microwave safe bowl, add the butter and the entire bag of marshmallows. Microwave for 2 minutes, stir, then microwave an additional minute.
Using a plastic or silicone spoon or spatula, stir the crispy rice cereal, crushed strawberries, and crushed chocolate sandwich cookies into the marshmallow mixture.
Using dampened hands, press the crispy treats mixture into a buttered baking dish (use a smaller pan for thicker treats, or larger pan for thinner treats). Drizzle the melted chocolate on top and let sit a few minutes until the chocolate sets. Serve.
