I honestly had no idea what to call this recipe.

Avocado Slaw? Avocado Cucumber Slaw? Avocado Cucumber Cabbage Slaw? I’m still not even sure that the name Avocado Cabbage Slaw really fits. But, it’s too late now. This is what it is – Avocado Cabbage Slaw. With cucumber.

This recipe is actually based off of a recipe that I made quite some time ago to use in these Blackened Salmon Wraps. The original recipe uses agave syrup, so I kept the recipe very similar, but eliminated the agave and added some crunchy, fresh cucumber to the mix.

Naturally, it’s a bit tarter than the original, but I like it this way. You can always add a bit of keto-approved sweetener like stevia, monk fruit, or erythritol to balance out the tart flavor.

Why This Recipe Works

This recipe is really great because it’s super easy to make and can be used in many different ways. At the bottom of this post you will find some ways to enjoy this slaw.

It’s a cool, refreshing summer side dish that’s made with all delicious, fresh ingredients.

This vegetarian recipe is also naturally low carb, keto friendly, and gluten free.

How to Make Avocado Cabbage Slaw

What You Need To Make This Recipe

To make this recipe, you will need:

  • 2 cups green cabbage (chopped or shredded)
  • 1 avocado (ripe)
  • 1 lime (juiced)
  • 1/4 cup cilantro
  • 1 cup cucumber (diced)
  • salt and pepper (to taste)

Prep!

To prepare for this recipe, you will need to chop or shred the cabbage, dice the cucumber, mince the cilantro, and juice the lime.

Create!

Mashed Avocado in a Small Wood Bowl

Scoop out the avocado and place in a small size bowl along with the lime juice and cilantro. Mash it together with a fork until well blended.

Alternatively, you can put these ingredients in a food processor and pulse until it reaches your desired level of smoothness.

Add the cabbage and cucumber to a medium bowl and gently mix in the avocado mixture until evenly combined. Taste and season with the salt and pepper, as needed.

Keto Avocado Cabbage Slaw in a White Serving Dish with Cilantro and Lime

Pour into a serving dish and top with extra fresh cilantro, if desired.

Serve immediately for the best results.

  • You can add more or less lime juice to suit your own taste.
  • If desired, add a keto-approved sweetener like stevia, monk fruit, or erythritol to balance out the tartness from the lime. Start with small amount and gradually increase.
  • You can blend the avocado, lime, and cilantro in a food processor if a smoother “sauce” is desired.

It’s best to eat this Keto Avocado Cabbage Slaw the day it’s made, as avocados turn brown fairly quickly.

You can do some of the prep work ahead of time. The cabbage and cucumber can be prepared ahead of time then you will just need to make the sauce right before serving.

Ingredients

  • 2 cups green cabbage * chopped or shredded
