Breakfast Egg Rolls are a fun and delicious breakfast. They are stuffed with bacon, eggs, and cheese. These egg rolls are easy to make, can be made ahead of time, and even frozen.

Who doesn’t love egg rolls? Making a perfect copycat recipe of traditional Chinese egg rolls would be a challenge. But, stuffing those crispy little wrappers with all kinds of other good stuff is very doable!

These Breakfast Egg Rolls are filled with scrambled eggs, crisp bacon, and cheese. You can also use cooked sausage or ham, if you prefer.

This recipe includes 3 different cooking methods – deep frying, baking, and air frying.

Why This Recipe Works

It’s just fun. Of course you could easily make toast or biscuits, but breakfast egg rolls are different and unique.

You can prepare the filling components ahead of time, or even prepare the eggs rolls ahead of time and store them in the refrigerator until you’re ready to cook.

These eggs rolls can be prepared in a variety of ways. The instructions below and in the recipe card detail each method.

How to Make Breakfast Egg Rolls

What You Need to Make This Recipe

Ingredients needed to make breakfast egg rolls laid out on a white background

To make this recipe you will need egg roll wrappers, eggs, bacon, cheddar cheese, butter, salt, pepper, and oil. The type of oil that you need will vary depending on the cooking method you are using.

Prep!

There is a little bit of prep work to this recipe.

You will need to cook your bacon and crumble it and shred the cheddar cheese.

Tip: shredded cheese from a block will give you the best melting and texture.

If you are deep frying your egg rolls, preheat a deep fryer to 350°F.

If you are baking them, preheat your oven to 425°F.

Create!

First, you’re going to need to make the scrambled eggs.

Crack the eggs into a bowl and season with salt and pepper.

Melt the butter in a large skillet over medium heat.

Add the eggs and top with the cheddar cheese and crumbled bacon.

Cook, stirring frequently, until the eggs are just cooked through.

Next, it’s time to wrap the egg rolls.

Place one egg roll wrapper with a point facing down towards you and brush water all the way around the edges.

Add 1/4th of the egg mixture on the center of the wrapper.

Fold in the left and right corners, then fold the bottom corner up.

Finally, fold the top corner down, gently pressing to ensure all the edges are sealed.

Follow the directions below for your preferred cooking method.

How to Cook Egg Rolls in a Deep Fryer

Preheat your deep fryer to 350°F.

Remove the basket and arrange the egg rolls in side so that they are not touching.

Lower the basket into the oil and fry until golden brown, watching closely, about 2-3 minutes.

Remove and transfer to a paper towel lined plate to cool.

How to Bake Egg Rolls in the Oven

Preheat your oven to 425°F.

Place the egg rolls on a baking sheet.

Lightly brush with olive oil.

Bake for 12-15 minutes, until lightly browned and crispy.

How to Air Fry Egg Rolls

Preheat your air fryer to 390°F.

Place the egg rolls into the basket so that they are not touching each other.

Lightly brush with oil.

Air fry for 8 minutes, flipping half way.

Breakfast Egg Rolls

These Breakfast Egg Rolls are a fun and delicious breakfast. They are stuffed with bacon, eggs, and cheese. These egg rolls are easy to make, can be made ahead of time, and even frozen.

Ingredients

  • 4 eggs
  • pinch salt
  • pinch pepper
  • 1 teaspoon butter
  • 1/2 cup cheddar cheese * shredded
  • 4 slices bacon * cooked, and crumbled
  • 4 egg roll wrappers

Instructions

  • Depending on the cooking method you are using, preheat a deep fryer to 350°F, or an oven to 425°F, or an air-fryer to 390°F.
  • Crack the eggs into a small bowl, season with salt and pepper and whisk until well blended.
  • Add the butter to a medium frying pan, over medium heat.
  • Sprinkle the cheddar cheese and crumbled bacon onto the top of the eggs and stir to combine until the eggs are cooked through.
  • Lay an egg roll wrapper on a flat surface so that one point is facing you. Brush the edges with water.
  • Place 1/4 of the egg mixture onto the center of the wrapper. Fold in the left and right corners, then fold the bottom corner up. Roll the egg roll away from you and seal the top point with more water, if needed. Repeat with the remaining 3 wrappers.
  • To Deep Fry: Arrange the egg rolls in the frying basket so that they don't overlap. Lower into the hot oil and fry under golden brown, approximately 2-3 minutes. Drain on paper towels.
  • To Bake: place the egg rolls on a baking sheet and lightly brush both sides with olive oil. Bake for 12-15 minutes or until golden brown.
  • To Air Fry: place the egg rolls in the basket so that they are not touching and lightly brush with olive oil. Air fry for 8 minutes, flipping halfway through cooking.

    We almost have to beg our kids to eat breakfast, and part of that is because the breakfast options usually aren’t as appetizing as what they eat the rest of the day. I don’t know that we could make these more than a few times a month, but when we did have the time, I know they would eat them.

      I used egg roll wrappers, won ton wrappers are a bite smaller but you could make breakfast bites with those! 🙂
