This Baked Shrimp with Tomato, Feta, Orzo, and Mint was the second meal I prepared from my most recent Sun Basket meal delivery. It was an excellent dinner choice for a busy weeknight!

One of the things I love most about Sun Basket, in addition to the fact they send mostly organic ingredients, is that every recipe includes something I’ve either never tried before or ingredients that can be hard to find at traditional grocery stores. I like trying new things, but with that being said, this recipe had all pretty basic ingredients. I’m not complaining. The meal was still really delicious and once again, half was enough to fill me up! I do think it’s fair to note that these meals are never enough for my fiance, but he eats way more than normal. Just a heads up in case you were thinking to try Sun Basket but have a man with a massive appetite or if you eat more than average yourself.
All the ingredients for the meal were in a labeled brown bag except for the shrimp. Sun Basket always places the meats and seafood under the bags closer to the ice to ensure they stay cold during delivery. I have to say that their shipping is the best I’ve seen. My ice always arrives almost completely solid and everything is cold inside. All the packaging is recyclable or reusable as well!
This was a really easy recipe to follow and only took about 30 minutes. The directions are great but I would still recommend reading through them first and prepping what you can before you start cooking to make the whole process go even smoother. While this Baked Shrimp with Tomato, Feta, Orzo, and Mint wasn’t my favorite meal ever, it was still really good and a great option for busy weeknights!
