Start the day off deliciously with this easy recipe for a Summertime Strawberry-Apricot Smoothie!
I love fresh apricots but they are not in season very long! If you are able to find them, I strongly suggest buying as many as you can! They are so good on their own or tossed into a salad. You can also use them in baked goods like Apricot Tarts! My current favorite way to enjoy apricots is in this Summertime Strawberry-Apricot Smoothie!

Strawberries and apricots are two of my most favorite fruits. I always have packages of fruit leather in both flavors stashed where my kids will never find them! I am literally eating one as I write up this recipe!
After finding fresh apricots I knew right away I wanted to make a smoothie with them. Anytime I make smoothies, I always use strawberries. Always. I decided to keep this recipe really simple. There are only 3 ingredients but they blend so well together!
This Summertime Strawberry-Apricot Smoothie is mostly sweet with a hint of tartness. It’s a delicious way to start the day, especially on a beautiful summer morning! The fact that it’s the same color as a sunrise just makes it all that much more special!
Prep!
You will need a blender, preferably with a smoothie cup for this recipe. You will also need a cutting board, knife, a large glass, and the ingredients.
Wash the strawberries and apricots and cut into chunks. Be sure to throw away the apricot pits.
Create!
Add the strawberries to the blender cup with 1/4 Cup of unsweetened almond milk. Blend until smooth and pour into a glass.
Add the apricots to the same blender cup with 1/4 Cup of unsweetened almond milk. Blend until smooth. Pour the apricot mixture on to the top of the strawberry mixture.
Present!
You can top your smoothie with slices of strawberries and/or apricots. Add a pretty straw, if desired, and enjoy!

- 2 Cups strawberries
- 3 apricots
- 1/2 Cup unsweetened almond milk divided
Instructions
