I absolutely love Greek yogurt. I started eating it as breakfast or a late night snack. Adding some mix-in’s is my go-to way to enjoy it the most. I just love texture, so things like granola, mini chocolate chips, nuts, and so on are a great way to get that extra crunch that I can’t get enough of.
However, a couple of months ago, I went on a huge smoothie binge. Seriously, a smoothies all day, every day kind of binge. I just love starting the day with a smoothie. In the summer, I have two go-to smoothie recipes, a Strawberry-Apricot Smoothie and this Pineapple-Lemon Smoothie.
I also refer to it as a Sunshine Smoothie because it’s just like summer in a glass. It just makes you feel all kinds of sunshine and happiness!

FAQ’s
Can You Freeze Fresh Pineapple For Smoothies?
Absolutely! Peel and cut it into small chunks and freeze in an air-tight container or freezer bag until you are ready to use it.
Why Is My Smoothie So Thick?
The use of ice and frozen fruit can really thicken a smoothie. If you find your smoothie is a bit too thick, you can thin it out some by pureeing it with water, a little at a time, until your desired consistency is reached.
