This Spinach Blueberry Salad has everything a good salad should have. It has blueberries for sweetness, feta for creaminess and pecans for texture. It’s finished with the most amazing, yet incredibly easy, blueberry vinaigrette. This is one salad that is sure to impress, yet takes very little effort to throw together.

This salad will make you fall in love with eating healthy food! It’s a simple and delicious salad made with fresh, seasonal blueberries. These flavors are so much more pronounced when you buy fruit and veggies in season. 

It can be a main meal or serve it as a starter salad. This recipe can make enough for two main dishes or four side dish salads.

If you are serving this salad as a dinner, you can put it in a large bowl and let everyone serve themselves. It’s vegetarian, but proteins like chicken or steak can be added.

Filled with fresh blueberries and avocado, it’s a healthy and flavorful meal. 

It’s also extremely versatile. There are a lot of substitutions you can make. Add chicken to make it heartier. Or use strawberries instead of blueberries. Be creative and have fun with it! 

Step-By-Step Instructions

Ingredients

Ingredients needed to make a spinach blueberry salad in bowls or on a white surface with text overlay.

Salad

  • 4 cups baby spinach leaves: can substitute with any other type of lettuce, arugula or kale.
  • 3/4 cup blueberries: fresh blueberries work best in this salad.
  • 1/3 cup feta (crumbled): or goat cheese.
  • 1/4 cup pecans (roughly chopped): walnuts or almonds can be used instead.
  • 1 avocado (diced)
  • 1/4 cup fresh mint leaves (optional garnish)

Blueberry Vinaigrette Dressing

  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon white vinegar: can use apple cider or balsamic vinegar instead.
  • 2 teaspoons honey: or maple syrup.
  • 1 teaspoon Dijon mustard
  • 1/4 cup blueberries: fresh is best.

Prep!

Crumble the feta, chop the pecans and dice the avocado.

Create!

To assemble the salad, layer in a serving bowl or divide between 2 or 4 plates, the spinach, blueberries, feta, pecans and avocado.

To make the blueberry vinaigrette dressing add the olive oil, vinegar, honey, Dijon mustard and blueberries to a small food processor or blender and blend until well combined. 

Chef’s Tip: you can also add all of the vinaigrette ingredients to a mason jar fitted with a tight lid and shake. It’s a great way to store leftover dressing as well.

Drizzle the vinaigrette over the salad immediately before serving.

Tips and Techniques

  • This salad is very versatile. Any type of lettuce can be used in place of the spinach, other types of berries can be substituted for the blueberries, and walnuts or almonds can be used instead of pecans. You can also add a protein like grilled chicken to make it a heartier meal.
  • The dressing can be made in a mason jar instead of a blender. Simply add all of the ingredients for the dressing to a mason jar with a tight fitting lid. Shake until well combined.
  • The undressed salad can be stored in an airtight container for up to 2 days. It is best to not cut the avocado until you are ready to eat it to prevent browning. Store the vinaigrette in a separate sealed container or jar in the refrigerator for up to 3 days.

    I love this Spinach Blueberry Salad. The Spinach and blueberries, and other ingredients have the perfect combination that will make this recipe tastier. Anyone can make this at home.
