Anyone else absolutely obsessed with Starbucks egg bites? I know it can’t just be me, because every other time I try to order my favorite flavor they are sold out.
My favorite variety is actually the Bacon and Gruyere egg bites and I did make a copycat recipe of that one but with gouda cheese – Instant Pot Egg Bites with Bacon & Gouda. However, whenever they are sold out, my backup plan is always the ham, cheddar and pepper egg bites.
Did you know Starbucks modeled this flavor of egg bites after a Denver omelet?
Of course, I had to make a copycat of that recipe, as well. This Instant Pot Egg Bites recipe with Ham, Cheddar and Peppers comes in clutch when the craving hits, but the desire to drive 15 minutes does not.
Also, Starbucks egg bites have 10 new carbs per 2 egg bites, whereas my recipe has less than 2 net carbs in 2 egg bites.

Why This Recipe Works
Making egg bites in the Instant Pot is quick and easy. Using an Instant Pot gives you a result similar to sous vide cooking, but it’s much simpler and there’s no need to purchase more kitchen equipment.
This is a great make-ahead recipe for busy mornings. Simply warm them up in the microwave and go.
The recipe is low in carbs and gluten free. It’s perfectly suitable for those following a keto diet, as well.
How to Make Egg Bites
Ingredients
- I like cheddar cheese, but you can use any kind of cheese that you like. Gouda and Gruyere are great alternatives.
- You can use jarred roasted peppers, just be sure to pat them dry first.

Prep!
You will need to shred the cheddar cheese and dice the ham and roasted peppers.
Chef’s Tip: if you don’t like cheddar cheese, or prefer another cheese, simply swap in an even amount of any cheese you like. You can use red and green peppers or just one or the other.
Create!
In a blender cup, add the eggs, cottage cheese, cheddar cheese, melted butter, garlic powder, onion powder and salt. Blend until smooth, about 20-30 seconds.
Pour the egg mixture evenly into all of the egg bite mold wells. You want to leave about 1/2-inch space at the top of each well.
Sprinkle the ham and roasted peppers evenly onto the batter in each well.
Lay a paper towel over the mold, then cover it tightly with foil so that steam doesn’t get into it while they cook.
Place the trivet into the bottom of the Instant Pot and add 1 cup of water. Place the egg bites mold onto the trivet.
Lock the lid into place and ensure that the vent is sealed. Set to pressure to cook on high for 8 minutes. Allow the pot to natural release for 10 minutes, then turn the valve the vent and open.
Carefully remove the egg bites mold and allow to cool for a few minutes before uncovering.
Present!
Using a butter knife, loosen the edges of each egg bite from the sides of the well and gently pop out each of the egg bites and plate.
Tips and Techniques
- If you don’t care for cheddar or would just like to change up the flavor, you can swap in another flavor of cheese. Cheddar and Gruyere are great options.
- You can use a combination of red and green peppers or all of one type. If using jarred peppers, be sure to pat them dry first.
- Store leftover egg bites in an air-tight container in the refrigerator. Use within 4 days.
