Step-By-Step Instructions
Ingredients
- 1 tablespoon butter (or olive oil)
- 1 red bell pepper (diced)
- 1 shallot (diced)
- salt
- pepper
- 1 cup baby spinach
- 8 egg whites
- 2 tablespoons heavy whipping cream
- 1/2 cup cheddar cheese (shredded)
- 1/2 cup cherry tomatoes (cut in half)
- parsley (optional garnish)

Chef’s Tip: you can substitute any vegetables or cheese that you like. You can also add herbs and spices like garlic, paprika, or Italian seasoning. Meats like sausage, bacon and/or ham can also be added.
Prep!
Preheat your oven to 350°F.
Dice the red bell pepper and shallot. Shred the cheese and cut the tomatoes in half.
Chef’s Tip: shred the cheese from a block for the best melting and texture.
Create!
Melt the butter in a 10-inch oven-proof skillet over medium heat.
Add the red bell pepper and shallots. Cook, stirring often, until slightly tender, about 3-5 minutes.
Add the spinach and cook until wilted.
Spread the vegetables out into the bottom of the skillet.
In a medium bowl whisk the egg whites, heavy cream, salt and pepper until foamy.
Pour the egg mixture over the vegetables in the skillet.
Sprinkle the shredded cheese and cherry tomatoes evenly over the top.
Cook a minute or two until the bottom just starts to set.
Transfer the pan to the oven.
Cook 10-12 minutes or until the eggs are mostly set, but still slightly jiggly in the center. The eggs will set more as the frittata cools.
Present!
Garnish with fresh parsley, if desired.
Cut into 8 slices and serve.
