Who doesn’t love good, old-fashioned Chocolate Chip Cookie Ice Cream Sandwiches? They are even better with creamy, vanilla ice cream squeezed between two homemade soft-baked cookies. Sprinkle on some mini chocolate chips, sprinkles, or chopped nuts for even more fun and flavor!

I can remember as a child scanning the menu on the ice cream truck for one of my favorite treats – Chocolate Chip Cookie Ice Cream Sandwiches. The mini chocolate chips around the outside were always my favorite.
These days, my kids do the same thing when the ice cream truck makes its rounds during the summer months.
This recipe is a copycat version. It’s made with cold and creamy vanilla ice cream sandwiched between two homemade chocolate chip cookies then sprinkled with mini chocolate chips. They are just like the ones my kids and I both love to get from the ice cream truck.

You can adapt this recipe however you like. You can use any flavor of ice cream, like Cinnamon Ice Cream, or sprinkle on other candy, like mini M&M’s, sprinkles or nuts instead of the mini chocolate chips.
It’s a perfect make-ahead recipe for summertime birthday parties or gatherings. Or, you can make a batch and leave them in the freezer for a quick, cool snack on a hot afternoon.
Step-By-Step Instructions
Ingredients
- 1/2 cup unsalted butter (room temperature)
- 1/3 cup dark brown sugar (packed)
- 1/3 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 large egg
- 1 cup all purpose flour
- 2 tablespoons all purpose flour: we highly recommend using high-quality baking products like King Arthur brand for the best results.
- 1/2 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 1 cup semi sweet chocolate chips
- 1 container vanilla ice cream
- 1/2 cup mini chocolate chips (optional)
Prep!
Preheat your oven to 375°F.
Grease a large cookie sheet or line it with parchment paper.
Create!
In a medium sized mixing bowl beat together the butter, brown sugar, and vanilla extract with an electric mixer until light and fluffy, about 5 minutes.
Mix in the egg.
In a separate bowl, combine the flour, baking soda and salt.
Gradually add the flour mixture into the butter mixture until well combined.
Stir in the chocolate chips.
Drop rounded tablespoons of the cookie dough onto the prepared cookie sheet about 2 inches apart.
Bake the cookies in the oven for 8 to 10 minutes, or until cooked through and light golden brown.
Transfer the baked cookies to a wire rack to cool completely.
Place the cooled cookies into a ziplock bag and into the freezer for 15 minutes before adding the ice cream filling.
When ready, place a scoop of ice cream onto the center of a cookie, and place another cookie on top to gently flatten down the scoop of ice cream. You can use a small frosting knife to smooth the edges.
Present!
If using mini chocolate chips, roll the prepared cookie ice cream sandwich sides into the mini chocolate chips.
Serve immediately or return to the freezer until ready to serve.
