Keto Cheesecake Bites

Indulge your sweet tooth with these guilt free Keto Cheesecake Bites. Made with just 4 ingredients and with only 1 net carb per serving, these delicious little bites let you truly enjoy dessert again!

It took me awhile before I attempted to make, or even eat, any keto-friendly desserts. But, after nailing down the Keto Chocolate Almond Mug Cake recipe, it was time to move on to my all time favorite dessert. Cheesecake.

I have never had a keto fat bomb since I tend to get plenty of healthy fats into my diet every day, but I do still like a sweet treat once in awhile. Cheesecake is a great keto option, because you can easily make sugar free cheesecake filling.

How to Make Keto Cheesecake Bites

Prep!

Set your cream cheese out to come to room temperature for about an hour before you begin.

Create!

In a large mixing bowl beat together the cream cheese, erythritol, and vanilla extract until well blended.

Place the bowl in the refrigerator for 30-60 minutes to allow the cream cheese to firm back up some.

Roll the cheesecake mixture into 16 evenly sized balls and place on a plate or parchment paper lined tray.

If you decide to drizzle these cheesecake balls with melted sugar free chocolate, it’s a good idea to place them in the freezer for an hour or so. This way the melted chocolate will set right up as you drizzle and not make as much of a mess.

Tip: I had excellent results melting ChocZero milk chocolate squares in the microwave for 30 seconds.

Serve immediately or store in an air-tight container in the refrigerator.

Tips and Techniques for the Best Keto Cheesecake Bites

  • Leave the cream cheese out to come to room temperature for about an hour before you begin.
  • After blending the cheesecake together, place it in the freezer for 30-60 minutes to make it easier to roll into balls.
  • Change the flavor of the cheesecake by either using a different extract in place of the vanilla extract, or by rolling/drizzling different ingredients on the outside of each cheesecake bite.
  • If you plan to drizzle the cheesecake bites with melted sugar free chocolate, freezing them first helps the chocolate to set up fast. I had excellent results using ChocZero milk chocolate squares in the microwave for 30 seconds.

Ingredients

  • 8 ounces cream cheese * at room temperature
  • 1/4 cup + 1 tablespoon powdered erythritol
  • 1/2 teaspoon vanilla extract
  • 1 ounce sugar free chocolate * melted, optional

Instructions

  • Add the cream cheese, powdered erythritol and vanilla extract to the mixing bow of an electric mixer.
  • Blend on medium speed until everything is well combined.
  • Place the bowl in the refrigerator for 30-60 minutes to allow the cream cheese to firm up some so that it's easier to work with.
  • Remove the bowl from the refrigerator.
  • Roll the cheesecake into 16 evenly sized balls and place on a tray lined with parchment paper.
  • If drizzling with melted sugar free chocolate, it's best to freeze the cheesecake bites for about an hour first, then drizzle. The chocolate should set right up.
