Cheesy Chicken Broccoli Rice Skillet is a low carb, keto-friendly one-pan meal. This delicious combination of chicken and riced broccoli in a rich, creamy cheddar cheese sauce is an easy weeknight meal and great for meal prep!

To get right to the point – this Cheesy Chicken Broccoli Rice recipe came about simply because I am obsessed with this recipe for Cheesy Broccoli Cauliflower Rice and wanted to turn it into a complete, one-pan meal.

I did leave out the cauliflower this time around. I use cauliflower a lot. Like, a lot. My fiance’s coworker even told him that there is too much cauliflower on my blog. Not that I’m going to quit cauliflower (never!), but I’m trying to vary things a bit. Enter broccoli rice!

  • The rich and creamy cheese sauce makes this recipe super family-friendly. I’m pretty sure most kids and adults will eat broccoli with no complaints when it’s smothered in cheese! Mine sure do!

How to Make Cheesy Chicken Broccoli Rice Skillet

Prep!

Cut the chicken into bite size pieces, mince the garlic, and shred the cheese.

Tip: it is strongly recommended that you shred the cheese from a block rather than using bagged pre-shredded cheese for best results.

Rice the broccoli in a food processor or with a box grater. I’ve seen frozen riced broccoli in stores a few times now, so that could be an option too.

Create!

Season the chicken with salt and pepper. Melt 1 tablespoon of the butter in a large skillet over medium high and add the chicken.
Cook until it is done throughout and no longer pink in the center, about 5-7 minutes.
Transfer the cooked chicken to a bowl, set aside, and return the pan to the stove top. Lower the heat to medium.

Add a drizzle of olive oil to the pan if needed and add the garlic.
Cook for 30 seconds, then stir in the broccoli rice.
Cook the broccoli rice, stirring frequently until tender, about 5 minutes. Transfer the broccoli rice to the bowl of chicken and return the pan to the stove top.

Melt the remaining 4 tablespoons of butter in the skillet, then whisk in the heavy whipping cream and mustard powder.
Cook until hot and bubbly then slowly stir in the cheddar cheese until it’s completely melted and smooth.

Stir the chicken and broccoli rice into the cheese sauce and cook a few more minutes until everything is heated through.

Present!

Tips and Techniques for the Best Cheesy Chicken Broccoli Rice

  • Shred the cheese from a block rather than using pre-shredded bagged cheese. I know I say it in every recipe that uses melted cheese, but it really does make a huge difference!
  • You can easily rice the broccoli in a food processor. If you don’t have a food processor, you can use a standard box grater.
  • Store leftovers in an air-tight container in the refrigerator. Use within 3-4 days for best results.

Ingredients

  • 5 tablespoons butter * divided
  • 1 pound boneless, skinless chicken breasts * cut into bite size pieces
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 clove garlic * minced
  • 4 cups broccoli * riced
  • 1/2 cup heavy whipping cream
  • 1 teaspoon mustard powder
  • 8 ounces sharp cheddar cheese * grated
