Buffalo Chicken Pizza is made with shredded chicken, mozzarella and blue cheese, and your favorite buffalo sauce. This spicy, cheesy pizza is incredibly delicious and can easily be modified to suite different diets, if needed.

Buffalo Chicken Pizza is a perfect combination of two favorites – buffalo chicken and pizza!
We kept the recipe as simple as possible. You can make it with only 5 ingredients, or go all out and make a homemade pizza crust too!
I’ve made this pizza on Cauliflower Pizza Crust, which is low carb and gluten free, as well as a traditional pizza crust. Both ways taste great.
For the quickest option, use an already prepared pizza dough or pizza crust that you can buy from the grocery store.

This is a great recipe to use for meal prep. Simply prepare as instructed, then portion out for the week.
This recipe can be easily modified to suit a low carb, keto diet or gluten free simply by using the appropriate type of pizza crust.
Step-By-Step Instructions
Ingredients
- 1 pizza crust: you can use any type of pizza dough or pizza crust that you like.
- 1/2 pound chicken {cooked and shredded)
- 1/2 cup buffalo sauce
- 1 cup mozzarella cheese (shredded)
- 1/2 cup blue cheese (crumbled)
- ranch or blue cheese dressing (optional)

Prep!
If you aren’t using leftover or rotisserie chicken, you’ll need to cook your chicken first, let it cool and shred it. You can season it with just salt and pepper or for some added flavor try using Poultry Seasoning or Adobo Seasoning.
Chef’s Tip: if you have an Instant Pot, this is probably the quickest way to cook super tender chicken that will shred really easily.
Preheat your oven as instructed for the pizza crust you are using.
Create!
Spread your pizza dough out on a baking sheet or pizza stone. Shape into a round or rectangular form, about 1/4″ thick. Pre-bake, if needed, according to the instructions on the pizza crust that you are using.
Note: most pizza dough requires pre-baking the crust.
Toss the shredded chicken with about 1/4 cup of buffalo sauce.
Spread the remaining 1/4 cup of buffalo sauce evenly onto the crust.
Top with mozzarella cheese.
Then, add the buffalo chicken.
Sprinkle on the blue cheese.
Bake for another 5-7 minutes, or until the cheese is melted and the crust is golden brown.
Present!
Cut pizza into 8 slices with a pizza cutter.
Serve with ranch or blue cheese dressing on the side for dipping, or drizzled on top, if desired.
Tips and Techniques
- You can use leftover or rotisserie chicken to speed up the prep time for this recipe.
- You can use a store-bought pizza dough or pizza crust. I usually prefer the taste and texture of making my own, but buying one is definitely quicker and easier.
- Store leftover pizza in an airtight container. Consume within 3 days.
