  • It’s a great recipe for weekly meal prep since you can easily and quickly make the Buffalo chicken filling. It’s also a great recipe to use up any leftover chicken that you might have for lunches the next day.
  • This recipe is packed with protein (which means it’s filling) and can easily be made low carb and keto friendly. Mission® Protein Tortilla Wraps have 7 grams of protein and only 3 net carbs per wrap.

How to Make Grilled Buffalo Chicken Wraps

Prep!

A silver bowl of shredded chicken and 2 forks

If you are not using leftover chicken or a rotisserie chicken, you will need to cook your chicken first, then shred it.

Shred the cheddar cheese and cut the celery into 3-inch sticks. Alternatively, you can dice the celery if you’d rather mix it into the Buffalo chicken.

Tip: it is recommended to shred the cheddar cheese from a block for the best melting.

Create!

A cast iron skillet with cheesy buffalo chicken mixture over a white background with a blue and white towel wrapped around the handle

In a large skillet over medium heat, add the shredded chicken, cream cheese, and Buffalo sauce.

Cook until the cream cheese is fully melted, and everything is hot and well blended. This takes about 5 minutes or so. Stir frequently to prevent the cheese from getting stuck to the pan.

Turn off the heat and stir in the shredded cheddar cheese.

Divide the slices of celery evenly between 6 wraps. If you choose to dice the celery, simply mix it into the Buffalo chicken instead.

Tips and Techniques for the Best Grilled Buffalo Chicken Wraps

  • Use leftover chicken or a rotisserie chicken to make preparing this recipe even simpler. You can always bake the chicken in the oven or pressure cook it for easy shredding, if you prefer.
  • You can dice the celery, rather than cut it into sticks, if you prefer to mix it into the Buffalo chicken.
  • Shred the cheddar cheese from a block for the best melting. Pre-shredded bagged cheese often contains a starch to prevent it from sticking to itself. This can cause the melted cheese to be grainy.
