Ever since Buffalo chicken dip shot up in popularity, a ton of different Buffalo chicken recipes have been spreading like wildfire across the internet.

We’ve contributed our fair share, including one of the most popular recipes on this website – Buffalo Chicken Cauliflower Casserole. But, if my teenage son has his way, these Buffalo Chicken Wraps would be number one.

They are loaded with the familiar flavor of buffalo chicken dip, with crunchy celery and a toasted tortilla to round things out.

Why This Recipe Works

These wraps boast so much flavor! The combination of cheeses, Buffalo sauce, and celery make these wraps super tasty and zesty. A little dip in blue cheese or ranch dressing can balance out the spice nicely, if preferred. Grilling the wraps also gives them a nice toasted flavor.

It’s a great recipe for weekly meal prep since you can easily and quickly make the Buffalo chicken filling. It’s also a great recipe to use up any leftover chicken that you might have for lunches the next day.

This recipe can be easily modified and can also suite a variety of different diets. Add blue cheese or bacon to amp up the flavor even. more. You can even make them low carb and keto friendly by using low carb tortillas, or gluten free by using gluten free tortillas.

Step-By-Step Instructions

Ingredients

Ingredients needed to make buffalo chicken wraps in a marble background with text overlay.

  • 1 pound chicken (cooked and shredded): I like to cook the chicken in my Instant Pot to make shredding it really easy, but you can cook it anyway you prefer, or use leftover or rotisserie chicken.
  • 1/2 cup Buffalo sauce
  • 4 ounces cream cheese (room temperature)
  • 4 ounces cheddar cheese (shredded)
  • 2 ribs celery (cut into thin strips): if preferred you can dice the celery instead.
  • 6 tortillas (burrito size): or you can use 12 smaller tortillas (fajita size).
  • Blue cheese or ranch dressing (optional, for dipping)

The entire recipe and instructions can also be found in the recipe card at the bottom of this post. You can print the recipe from the card, if needed.

Prep!

If you are not using leftover chicken or a rotisserie chicken, you will need to cook your chicken first, then shred it.

Shred the cheddar cheese and cut the celery into 3-inch sticks. Alternatively, you can dice the celery if you’d rather mix it into the Buffalo chicken.

Chef’s Tip: it is recommended to shred the cheddar cheese from a block for the best melting. Pre-shredded bags of cheese contain added starches that can make the texture more grainy when melted.

Create!

Buffalo chicken mixed with cream cheese and cheddar cheese in a black skillet.

In a large skillet over medium heat, add the shredded chicken, Buffalo sauce and cream cheese.

Cook until the cream cheese is fully melted, and everything is hot and well blended. This takes about 5 minutes or so. Stir frequently to prevent the cheese from getting stuck to the pan.

Turn off the heat and stir in the shredded cheddar cheese.

Two tortillas on a marble background with one topped with celery slices and the other with buffalo chicken covering the celery slices.

Divide the slices of celery evenly between the 6 tortillas. If you choose to dice the celery, simply mix it into the Buffalo chicken instead.

Top each tortilla with an even amount of the Buffalo chicken mixture.

Two tortillas on a marble background with one having two sides folded in and the other being completely folded into a burrito.

Fold in the top and bottom edges of the tortilla, then the sides.

Two grilled buffalo chicken wraps in a black skillet.

Wipe out the skillet, and return it to medium heat.

Add the wraps, and grill until golden brown, about 1 minute per side.

Serve with additional celery sticks, or side of blue cheese or ranch dressing, for dipping, if desired.

Tips and Techniques

  • Use leftover chicken or a rotisserie chicken to make preparing this recipe even simpler. You can always bake the chicken in the oven or Instant Pot for easy shredding, if you prefer.
  • You can dice the celery, rather than cut it into sticks, if you prefer to mix it into the Buffalo chicken.
  • Blue cheese or bacon can be added to the wraps for even more flavor. Using low carb or gluten free tortillas makes them suitable for different dietary needs.
  • Shred the cheddar cheese from a block for the best melting. Pre-shredded bagged cheese often contains a starch to prevent it from sticking to itself. This can cause the melted cheese to be grainy.
  • Leftovers can be stored in an airtight container in the refrigerator. Consume within 3 days.
  • You can freeze these Buffalo Chicken Wraps. Either wrap them individually in plastic wrap or freeze them on a sheet pan, then remove and add them to an airtight container or freezer bag. To reheat frozen wraps in the microwave, wrap one in a damp paper towel. Place on a microwave-safe plate and heat for 1 minute on each side. If additional time is needed, heat in 30 second increments. Wraps can also be reheated in the oven preheated to 350ºF for about 15 minutes. The internal temperature of reheated food needs to reach 165ºF on a food thermometer inserted in the center of the thickest portion.
