Step-By-Step Instructions
Ingredients
- 1 pound chicken (cooked and shredded): I like to cook the chicken in my Instant Pot to make shredding it really easy, but you can cook it anyway you prefer, or use leftover or rotisserie chicken.
- 1/2 cup Buffalo sauce
- 4 ounces cream cheese (room temperature)
- 4 ounces cheddar cheese (shredded)
- 2 ribs celery (cut into thin strips): if preferred you can dice the celery instead.
- 6 tortillas (burrito size): or you can use 12 smaller tortillas (fajita size).
- Blue cheese or ranch dressing (optional, for dipping)
The entire recipe and instructions can also be found in the recipe card at the bottom of this post. You can print the recipe from the card, if needed.
Prep!
If you are not using leftover chicken or a rotisserie chicken, you will need to cook your chicken first, then shred it.
Shred the cheddar cheese and cut the celery into 3-inch sticks. Alternatively, you can dice the celery if you’d rather mix it into the Buffalo chicken.
Chef’s Tip: it is recommended to shred the cheddar cheese from a block for the best melting. Pre-shredded bags of cheese contain added starches that can make the texture more grainy when melted.
Create!
In a large skillet over medium heat, add the shredded chicken, Buffalo sauce and cream cheese.
Cook until the cream cheese is fully melted, and everything is hot and well blended. This takes about 5 minutes or so. Stir frequently to prevent the cheese from getting stuck to the pan.
Turn off the heat and stir in the shredded cheddar cheese.
Divide the slices of celery evenly between the 6 tortillas. If you choose to dice the celery, simply mix it into the Buffalo chicken instead.
Top each tortilla with an even amount of the Buffalo chicken mixture.
Fold in the top and bottom edges of the tortilla, then the sides.
Wipe out the skillet, and return it to medium heat.
Add the wraps, and grill until golden brown, about 1 minute per side.
Present!
Serve with additional celery sticks, or side of blue cheese or ranch dressing, for dipping, if desired.
