Salmon is one of my favorite proteins to use in quick meals. Finding new ways to prepare it, or sides to serve with it is a great way to add some variety! I love that this recipe uses a combination of boiling the vegetables, then finishing them in the oven on a sheet pan with the salmon. This method ensures that everything is done cooking at the same time.
