Bacon & Blue Cheeseburger Jalapeno Poppers

  • 8 jalapeno peppers
  • 1/2 lb ground beef
  • 1/3 C blue cheese
  • 8 slices bacon * cut in half


  • Preheat your oven to 375°F. Cut each jalapeno pepper in half, length wise.  
  • Using a small spoon, clean out as much or as little of the membrane and seeds inside (this is what gives the pepper heat, so leave some if you want your poppers to be more spicy).  Set aside.
  • In a medium skillet, over medium heat, add the ground the beef. Cook for 5-7 minutes, until no longer pink and thoroughly cooked through.  Once the beef is cooked through, mix in the blue cheese until its melted.
  • Fill each pepper half with the ground beef.
  • Wrap each pepper half with a piece of the bacon and secure with a toothpick (the bacon will shrink as it cooks so don't skip securing it!).
  • Bake for 25 minutes or until the peppers are tender.  If needed, you can put the peppers under the broiler for 2-3 minutes to crisp the bacon more.
