- 8 jalapeño peppers
- 1/2 pound ground beef
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/3 cup blue cheese
- 8 slices bacon (cut in half)
Preheat your oven to 375°F.
Cut each jalapeño pepper in half, length wise. Using a small spoon, clean out as much or as little of the membrane and seeds inside (leave some if you want your poppers to be more spicy). Set aside.
In a medium skillet, over medium heat, add the ground the beef and season with salt and pepper. Cook for 5-7 minutes, or until no longer pink and thoroughly cooked through.
Once the beef is cooked through, mix in the blue cheese until it's melted.
Fill each pepper half with the ground beef.
Wrap each pepper half with a piece of the bacon and secure with a toothpick. Place on a rack over a baking sheet.
Bake for 25 minutes or until the peppers are tender.
If needed, put the peppers under the broiler for 1-2 minutes, watching closely, to crisp the bacon more.

- If your peppers are larger, you may need a full slice of bacon per pepper instead of a half of a slice.
- For crispier bacon, you can put the peppers under the broiler for 1-2 minutes, watching closely to prevent burning.
- Store leftover jalapeño poppers in an air-tight container in the refrigerator. Use within 5-7 days.
