Curry Chicken Salad Lettuce Wraps
A delicious curry chicken salad you can eat as a lettuce wrap, on a roll, or even plain!

- 2 lbs boneless, skinless chicken breasts cooked, roughly chopped
- 1/2 Cup chopped pecans
- 1 Cup mayonnaise
- 1 teaspoon ground ginger
- 1 Tablespoon curry powder
- 1 Cup red seedless grapes halved (or quartered if they are large)
Add chopped chicken to a large mixing bowl and mix in the chopped pecans.
In a smaller bowl mix the mayonnaise, ground ginger and curry powder until well blended. Mix into the chopped chicken and pecans. Gently fold in the grapes.
Serve on leaves of lettuce.
