Curry Chicken Salad Lettuce Wraps

A delicious curry chicken salad you can eat as a lettuce wrap, on a roll, or even plain!

  • 2 lbs boneless, skinless chicken breasts cooked, roughly chopped
  • 1/2 Cup chopped pecans
  • 1 Cup mayonnaise
  • 1 teaspoon ground ginger
  • 1 Tablespoon curry powder
  • 1 Cup red seedless grapes halved (or quartered if they are large)


  • Add chopped chicken to a large mixing bowl and mix in the chopped pecans.
  • In a smaller bowl mix the mayonnaise, ground ginger and curry powder until well blended. Mix into the chopped chicken and pecans. Gently fold in the grapes.
  • Serve on leaves of lettuce.
