  • Combine the oats, milk, maple syrup, chia seeds, mascarpone cheese, instant espresso, and vanilla in a bowl and mix until well combined.
    2 cups old fashioned rolled oats, 2 cups whole milk, 1/4 cup maple syrup, 2 tablespoons chia seeds, 2 tablespoons mascarpone cheese, 2 teaspoons espresso powder, 1 teaspoon vanilla extract
  • Place the lid on or cover the bowl with plastic wrap.
  • Refrigerate for at least 6 hours.
  • In the morning, remove the lid or plastic wrap. Spoon the oatmeal into 4 bowls or mason jars.
  • Top each one with a layer of the vanilla yogurt and a dusting of cocoa powder.
