Pat the wings dry with paper towels and add to a large bowl or plastic bag.

Combine the chipotle chili powder, smoked paprika, garlic powder, salt, and onion powder in a small bowl and mix well.
2 tablespoons chipotle chili powder, 1 tablespoon smoked paprika, 1 teaspoon garlic powder, 1 teaspoon salt, 1/2 teaspoon onion powder
Add the oil and seasoning to the bowl with the turkey wings and toss to evenly coat the meat.
1 tablespoon vegetable oil
Place in the refrigerator to marinate for at least an hour.
When you are ready to begin cooking, preheat your smoker to 225-250°F.
Place the wings over indirect heat.
Add wood chips and maintain a steady smoke. We use pecan wood chips, but cherry or maple wood chips would also work well.
Cover and smoke for 1 1/2 to 2 hours or until the internal temperature reaches 165°F on a meat thermometer inserted into the center of the thickest portion (not touching the bone).
Remove the wings and let them rest for 10 to 15 minutes.
Serve as is, or with your favorite sauce.
