  • Prepare your pie crust if making it homemade. If using a store bought pie crust, allow it to sit at room temperature for about 20 minutes before you begin.
  • Preheat your oven to 425°F.
  • Slice the apples thin and add to a medium size bowl with the sugar, cinnamon, allspice, nutmeg, and cloves. Toss to combine.
  • Roll the pie crust out into a circle shape.
  • Layer the apples around the center, leaving a 1 1/2-inch border.

Crisp Topping

  • Combine the oats, brown sugar, flour, and butter in the same bowl that was used for the apples.
  • Using a fork, mash it all together until crumbs form.
  • Top the apples with the crisp topping, then fold the edges of the pie crust over the apples about an inch, pinching the folds together as you go.
  • Brush with an egg wash, if desired - see notes.
  • Bake for 25-30 minutes, or until the crust is golden brown and the apples are bubbling hot.
