Mango Coconut Popsicles

You will enjoy a burst of tropical flavor in every bite of these Mango Coconut Popsicles. They are the best treat to cool down with on a hot summer day.

  • Cut the mango into chunks. Use a mango cutter to make it easier, if needed.
  • Puree the mango in a blender until smooth. Taste and adjust the flavor, if necessary. Adding a small amount of honey will make it sweeter. Use lime juice to balance the flavor if your mango is overly ripe.
  • If layering the flavors, pour the mango puree into a bowl and clean the blender.
  • Add the coconut milk and shreds and blend until super smooth. If you are blending the flavors, you can add the coconut milk and shreds with the mango and blend it together.
  • Pour the puree into the popsicle molds, layering flavors, if desired. Freeze for approximately 3 hours.

  • You can adjust the flavor of the mango, if needed. If the mango is less ripe and more sour, add a little honey and blend to taste. For mango that’s overly ripe and too sweet, you can add lime juice, a little at a time, to balance out the flavor.
