Greek Yogurt Fruit Protein Popsicles

Popsicles keep popping up everywhere this summer - and for good reason!  They are delicious!  I just had to join in on sharing the fun with these Greek Yogurt Fruit Protein Popsicles I made!

Ingredients

  • 1 Cup Vanilla Flavored Greek Yogurt
  • 1/2 Cup Berries *we used blueberries and strawberries
  • 1 teaspoon lemon zest

Instructions

  • Add the berries to a food processor and pulse a few times until they form a chunky puree (or smash using a mortar and pestle).
  • In a small bowl, combine the vanilla flavored greek yogurt, fruit puree and lemon zest. Divide the mixture evenly into your popsicle molds (we used rocket-pop shaped molds and were able to make 4 popsicles). Freeze thoroughly.
  • To separate, loosen the handle of the mold gently, running the popsicle mold under warm water, if necessary. Enjoy!
