Bruschetta Chicken

Chicken
- 1 1/2 pounds boneless, skinless chicken breasts (small or thin cut)
- salt
- pepper
- 1 tablespoon extra virgin olive oil
Garlic Breadcrumbs
Heat a teaspoon of olive oil in a small skillet over medium heat.

Add the garlic and cook for about 1 minute, then the breadcrumbs and cook another 2-3 minutes until golden. Place in a bowl and set aside to cool.

Chicken
Season the chicken with salt and pepper.
1 1/2 pounds boneless, skinless chicken breasts, salt, pepper
Add 1 tablespoon of olive oil to a large skillet over medium-high heat.

Add the chicken and cook about 4-5 minutes per side, or until golden brown and no longer pink in the center. The internal temperature of the chicken needs to reach 165°F on a meat thermometer inserted into the center of the thickest portion. Remove to a plate and tent with foil to keep warm. Return the skillet to the stove top.
Bruschetta
Lower the heat to medium and add another teaspoon of olive oil to the skillet the chicken was cooked in.

Add the garlic and cook for about 1 minute, then add the tomatoes and heat until just warmed through.
2 cloves garlic, 4-5 roma tomatoes
Stir in the balsamic vinegar.

Nestle the chicken breasts back into the pan.
Garnish the chicken with as much of the breadcrumbs and basil as you like.
2 tablespoons basil
Serve as is or over pasta, spaghetti squash or zoodles.
Tips and Techniques
- Rather than pan-searing, you can grill or bake the chicken, if you prefer.
- To save time, you can make the bruschetta topping ahead of time and store it in the refrigerator. You can also make the garlic breadcrumbs ahead of time and store those covered in a cool, dry place until needed.
- Store any leftovers in an airtight container in the refrigerator. Consume within 3-4 days.
