Peach Galette

A homemade Peach Galette is one of summers simplest dessert recipes. Made with fresh, sweet peaches and flaky pie crust, this free-form tart is incredibly flavorful and juicy. Sometimes called a peach crostata, this quick and rustic Peach Galette presents beautifully, so you are sure to impress a crowd with this tart!

  • Prepare your pie crust if making it homemade. If using a store bought pie crust, allow it to sit at room temperature for about 20 minutes before you begin.
  • Preheat oven to 375°F.
  • Gently toss peaches, brown sugar, cinnamon, and cornstarch together in a medium bowl.
  • Roll out the crust on a parchment paper lined baking sheet.
  • Layer the peach slices into the center of the crust leaving a 1 1/2-inch border around the edge.
  • Fold the edges of the dough over, overlapping and crimping as you go.
  • Brush with egg wash, if desired. Sprinkle with sanding sugar, if desired.
  • Baked for 40-45 minutes, or until the crust is golden brown and the peaches are bubbling hot.
  • Serve warm, topped with vanilla ice cream or fresh whipped cream, if desired

Notes

Tips and Techniques

  • You can use a homemade pie crust if you prefer the flavor and a more rustic look. Using a store bought crust does make the recipe quicker and easier if time and ease is a concern.
  • Ensure that your peaches are sliced thin. This will make make layering them easier.
  • Brushing an egg wash over the pie crust will give a deeper golden color and shine. You can make an egg wash by whisking a whole egg. You can also add a tablespoon of water or heavy cream, if preferred.
  • Galettes are best eaten the day they are prepared. Store at room temperature. If keeping past 1 day, tightly cover and store in the refrigerator.
