Ingredients

  • 2 medium cucumbers (thinly sliced)
  • 1/4 cup shallot (thinly sliced)
  • 1/4 cup sour cream
  • 1/4 cup keto-approved mayonnaise
  • 1 lemon (juiced and zested)
  • 1 tablespoon erythritol
  • salt (to taste)
  • pepper (to taste)
  • fresh parsley or dill (optional)

Instructions

  • Place the cucumbers and shallots in a large bowl.
  • Mix together the sour cream, mayonnaise, sweetener, lemon juice and zest. Taste and season with salt and pepper, as needed.
  • Pour the dressing over the vegetables and toss gently to combine.
  • Garnish with fresh parsley or dill, if desired.

Notes

Tips and Techniques

  • There is no need to peel the cucumber, unless they are waxed, or you prefer to.
  • Store leftovers in an airtight container in the refrigerator. Use within 2 days.
