Ingredients

  • 6 slices prosciutto
  • 20 ounces cheese filled tortellini pasta (refrigerated)
  • 1 teaspoon extra virgin olive oil
  • 2 cloves garlic (minced)
  • 15 ounces Alfredo sauce (store bought or homemade)
  • 1 cup peas (frozen)
  • Parmesan Reggiano (shredded, for garnish)
  • fresh parsley (minced, for garnish)

Instructions

  • Preheat oven to 350°F.
  • Lay the prosciutto onto a parchment paper-lined baking sheet, leaving a little space between each slice.
  • Place in the preheated oven and cook for approximately 10 minutes or until it darkens in color and gets crispy. Keep a very close eye on the prosciutto as it cooks to prevent burning.

  • While the pasta is cooking, add a drizzle of extra virgin olive oil to a sauce pot on medium heat. Add the garlic and cook for 30-60 seconds.Stir in the Alfredo sauce and heat to warm through.
  • Add the sauce to the cooked tortellini and stir in the peas. Heat through.
  • To serve, top bowls of tortellini and peas with crumbled, crispy prosciutto, shredded Parmesan cheese and fresh parsley.
