- 1 pound salmon
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup pure maple syrup
- 1/4 cup brown sugar (packed)
- 2 tablespoons bourbon whisky (I use Maker's Mark)
Preheat oven to 425°F.
Season salmon with salt and pepper and place on a lightly oiled baking sheet.
Roast for 8-12 minutes, depending on the thickness of your salmon, or until opaque and can easily be flaked with a fork. The internal temperature should reach 145°F.
Meanwhile, add the maple syrup, brown sugar, and bourbon to a small saucepan. Heat on medium until well blended. Keep warm, stirring as needed.
When the salmon is done roasting, drizzle on the glaze. Garnish with minced parsley or thin slices of green onion, if desired.
