Steak Fajitas

Steak Fajitas are a quick and easy dinner recipe for busy weeknights. They are loaded with deliciously seasoned meat and vegetables, and can be ready to eat in just 30 minutes. This recipe is low carb and keto friendly and can be made gluten free, as well.

Ingredients

Chili Lime Marinade

Steak Fajitas

  • 1 tablespoon extra virgin olive oil
  • 1 pound thinly sliced steak * skirt, flank, or flat iron
  • 1 yellow onion * cut into thin strips
  • 3 sweet peppers * cut into thin strips
  • 8 tortillas * corn or flour

Instructions

  • Mix together the olive oil, lime juice, garlic, brown sugar, chili powder, cumin, red pepper flakes, salt, smoked paprika, oregano, and cilantro. Whisk well.
  • Place the steak strips into a large bowl and pour the marinade over the top. Stir gently to coat, then set aside.
  • Set a large skillet over medium-high heat and add the olive oil.
  • Add the strips of peppers and onion and cook until soft and just starting to blister, about 5 minutes. Remove to a plate.
  • Next, add the steak strips to the same pan that was used to cook the peppers and raise the heat to high (unless you’re using flat iron, then leave it at medium-high).
  • Cook until just done through, about 5 minutes.
  • Stir the peppers back into the pan and heat to warm through.
  • Divide the steak fajita mixture between the tortillas and enjoy.

Notes

Tips and Techniques

  • For best results use skirt, flank or flat iron steak. Thinly slice the steak before marinating to get the most flavor.
  • Marinating the steak longer (1-2 hours) will result in a more intense flavor. However, you don’t want to marinate it too long or it could toughen the meat.
  • Store leftovers in an airtight container in the refrigerator. Use within 3-4 days.

All of the ingredients in Steak Fajitas are considered low carb with the exception of the brown sugar and the tortillas. You have a few options to make this recipe low carb and keto friendly:
  • Omit the brown sugar or replace it with a sugar free substitute, like Swerve.
  • Enjoy them without the tortilla
  • Serve the steak and vegetables over cauliflower rice or zoodles
  • Use low carb tortillas

How To Make Gluten Free Steak Fajitas

This recipe is entirely gluten free with the exception of the flour tortillas. You have a few options to make this recipe entirely gluten free:
  • Enjoy them without a tortilla
  • Use corn tortillas
  • Use gluten free tortillas
  • Serve the steak vegetables over rice, cauliflower rice, or zoodles
