Mini Low Carb Cucumber Bites

  • 4 ounces cream cheese * at room temperature
  • 1 tsp fresh chives * minced
  • 1 tsp fresh basil * minced
  • 1 tsp fresh parsley * minced
  • 1 clove garlic * minced
  • 1 cucumber
  • smoked paprika * optional


  • PREP: You will want to set your cream cheese out ahead of time so that it can come to room temperature. This will make it so much easier to mix once you get started!
  • Mince the chives, basil, parsley, and garlic. Peel the cucumber, if desired, and then cut it into 20 even slices.
  • In a small bowl, add the cream cheese, minced herbs, and garlic. Mash everything together with a fork until it is well combined.
  • Spread the cream cheese evenly onto all of the cucumber slices. Top with more fresh herbs and smoked paprika, if desired.
