Pork Chops with Plum Sauce

  • 8 pork chops
  • salt and pepper to taste

Plum Sauce

Instructions

  • Preheat your oven to 350°F.
    Dice the scallion, mince the garlic, and slice the plums. 
  • Place the pork chops on a broiler pan or baking sheet. Season with salt and pepper and place in the over for about 30 minutes, or until cooked through and the internal temperature reaches 145-160°F.
  • Meanwhile, heat the olive oil in a large skillet over medium heat. Add the scallion and garlic and cook for 3-4 minutes until softened. Add the plums, honey, balsamic vinegar, ginger (I use the squeeze kind, but fresh works even better!), and season with salt and pepper. Cook 5-7 minutes, until the plums are softened.
  • Pour the plum mixture into a blender and process until smooth.
  • Plate the pork and top with plum sauce. Add additional slices of plum, if desired.
