If using a griddle, preheat it to 350°F.
Whisk together the eggs, milk, and vanilla extract in a medium bowl. Set aside.

Beat the cream cheese and powdered sugar together with a stand mixer fitted with a paddle, or a hand-held mixer, until light and creamy.

Spread 1 tablespoon of the cream cheese onto a slice of bread and top with the strawberries. Spread another tablespoon of cream cheese onto a second slice and press over the strawberries to seal the two pieces of bread together. Repeat with the remaining bread, cream cheese, and strawberries.
8 slices bread, 1 cup fresh strawberries
If using a flat bottom skillet, rather than a griddle, melt 1 tablespoon of butter in it over medium heat.
1 tablespoon butter or nonstick cooking spray
Dip each “sandwich” into the egg mixture until very wet and let the excess drip off.
After removing each sandwich, place it directly on to the hot griddle or skillet.
Allow to cook for 1-2 minutes or until golden brown on the bottom. Before flipping, sprinkle a pinch of cinnamon onto each slice.

Flip and cook for an additional 1-2 minutes.
