Strawberry French Toast

Strawberry French Toast is a stuffed french toast recipe filled with sweet cream cheese and fresh strawberries. It’s the best breakfast or brunch recipe when you’re craving something lightly sweet and incredibly delicious.

Ingredients

  • 4 eggs
  • 1/2 cup whole milk (or half-and-half)
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese (at room temperature)
  • 1/2 cup powdered sugar
  • 8 slices bread (sourdough, Challah or Brioche
  • 1 cup fresh strawberries (sliced thin)
  • 1 tablespoon butter or nonstick cooking spray (for cooking)
  • 1/2 teaspoon cinnamon

Instructions

  • If using a griddle, preheat it to 350°F.
  • Whisk together the eggs, milk, and vanilla extract in a medium bowl. Set aside.

  • Beat the cream cheese and powdered sugar together with a stand mixer fitted with a paddle, or a hand-held mixer, until light and creamy.

  • Spread 1 tablespoon of the cream cheese onto a slice of bread and top with the strawberries. Spread another tablespoon of cream cheese onto a second slice and press over the strawberries to seal the two pieces of bread together. Repeat with the remaining bread, cream cheese, and strawberries.

  • If using a flat bottom skillet, rather than a griddle, melt 1 tablespoon of butter in it over medium heat.

  • Dip each “sandwich” into the egg mixture until very wet and let the excess drip off.
  • After removing each sandwich, place it directly on to the hot griddle or skillet.
  • Allow to cook for 1-2 minutes or until golden brown on the bottom. Before flipping, sprinkle a pinch of cinnamon onto each slice.

  • Flip and cook for an additional 1-2 minutes.
  • Enjoy this french toast as is, or try it with a topping of powdered sugar or strawberry syrup for even more fruit flavor!

Notes

Tips and Techniques

  • If using very thick bread, you can cut a pocket into one side of the crust and stuff the cream cheese and strawberries inside, rather than make a “sandwich.”
  • Store leftovers in an airtight container in the refrigerator. Consume within a day or two at the most, for best results.
