Chocolate Peppermint Kiss Cookies

  • Preheat oven to 350°F.
  • Whisk together sugar, cocoa powder, vegetable oil, eggs, baking powder, vanilla extract and salt in a large bowl until well combined.
    1 cup granulated sugar, 1 cup unsweetened cocoa powder, ½ cup vegetable oil, 2 large eggs, 1 ½ teaspoons baking powder, 1 teaspoons vanilla extract, 1/4 teaspoon salt
  • Gradually sift in the flour, mixing until just combined. The batter will be thick.

  • Roll the dough into 15 1.5 inch balls, then roll in the crushed candy canes.

  • Set on a prepared baking sheet 1-2 inches apart. Flatten slightly.
  • Bake for 10-11 minutes.
  • Allow to cool on the cookie sheet for 5-7 minutes, then press one peppermint kiss into the center of each cookie.

  • Transfer to a wire rack and allow to cool completely.

Notes

Tips and Techniques

  • Rolling the cookies in the crushed candy canes makes them extra minty. You can omit this step, if you prefer less mint flavor.
  • Make sure to wait 5-7 minutes before placing the peppermint kisses on the cookies, otherwise they will melt and lose their shape.
  • Store cookies in an airtight container at room temperature. Consume within 3-4 days for best results.
