- 1/2 cup peanut butter
- 1/4 cup honey
- 1 cup old fashioned rolled oats
- 1 tablespoon cocoa powder (I use SCHARFFEN BERGER Unsweetened 100% cacao dark chocolate cocoa powder)

Combine the peanut butter and honey.
1/2 cup peanut butter, 1/4 cup honey
Mix in the oats, cocoa powder and chocolate chunks. The mixture should be thick and tacky, but not dry. If mixture is too dry, gradually add more honey. If it is too wet, gradually add more oats.
1 tablespoon cocoa powder, 1 cup old fashioned rolled oats
Roll spoonfuls of the mixture into approximately 15 1-inch round balls. Place on a sheet tray.
Refrigerate for 20 minutes, then transfer to an airtight container and store in the refrigerator to enjoy as desired.
Tips and Techniques
- The amount of honey or oats may need to be adjusted slightly depending on the type of peanut butter that you use and how creamy it is.
- Energy balls can be stored in the freezer in freezer bags or an airtight container for up to 1 month.
