Chicken
Heat olive oil in a large, deep skillet over medium-high. Season the chicken with salt and pepper and add to the hot skillet.
Cook, until golden brown and no longer pink in the center, about 5-7 minutes. Remove to a plate and tent with foil to keep warm.
Peanut Butter Sauce
Return the skillet to the stove top, lower the heat to medium, and add the remaining olive oil.
Once hot, add the peppers and onion. Cook until tender and starting to caramelize around the edges, about 10 minutes.
Stir in the ginger and garlic and cook for 30-60 seconds.
Pour in the coconut milk and stir in the peanut butter until creamy and well blended.
Stir in Swerve, coconut aminos, chili paste (if using) and lime juice. Taste and adjust seasonings, as desired.
Return the chicken to the pan to warm through.
Serve over cauliflower rice, zucchini noodles, or rice.
Garnish with fresh cilantro, slices of green onions, chopped peanuts and/or lime wedges, if desired.
