Toasted Almond Flour Crumbs
- 1 tablespoon unsalted butter
- 1/4 cup blanched almond flour
- 1/8 teaspoon salt
- 1 teaspoon lemon zest
- 1 tablespoon fresh parsley (minced)
Toasted Almond Flour Crumbs
Melt butter in a small skillet or pot over medium heat. Add the almond flour and a pinch of salt. Cook until lightly browned, stirring frequently, 3-5 minutes. Watch closely to prevent burning.
Remove from heat and stir in the lemon zest and parsley. Transfer to a small bowl and set aside. Wipe out the pan and set aside.
Broiled Asparagus
Place the asparagus on a baking sheet. Drizzle on the olive oil and season with salt and pepper.
Position the top rack in the over so that it is 5-6 inches below the broiler. Turn the broiler on and place the baking sheet with the asparagus under it.
Broil for approximately 5 minutes, undisturbed but watching closely, or until crisp-tender.
Parmesan Cheese Sauce
While the asparagus is roasting, add the heavy cream to the skillet or pot that was used for the bread crumbs and place over medium heat. Bring to a simmer, then gradually mix in the Parmesan cheese until it’s creamy and smooth.
Tips and Techniques
- Use fresh asparagus and parsley for the best results.
- You can use regular bread crumbs in place of the almond flour, if desired.
- Store leftovers in an airtight container in the refrigerator. Consume within 3-5 days.
