Whisk together the eggs, milk, and vanilla extract in a medium bowl.
Dip each slice of bread into the egg mixture until very wet and let the excess drip off.
After removing each slice of bread, place it directly on to the hot griddle. Sprinkle with cinnamon.
Cook for 1-2 minutes. Flip and cook an additional 1-2 minutes. Serve, as desired.
