The cauliflower gets drizzled with olive oil and seasoned with salt and pepper. It is then roasted for about 15 minutes or until just fork-tender.
While the cauliflower is roasting, you can prepare the truffle cheese sauce. This recipe calls for truffle zest rather than oil. It is relatively inexpensive.
Gently stir the roasted cauliflower into the cheese sauce. Transfer to a baking dish.
Mix melted butter with almond flour to create "breadcrumbs." Sprinkle over the top of the cauliflower mac and cheese.
Bake for 20 minutes. To toast the breadcrumbs more, you can put the dish under the broiler for a minute or two.
