Truffle Cauliflower Mac and Cheese

Truffle Cauliflower “Mac” and Cheese is rich and creamy with an amazing umami flavor thanks to added truffle zest.  This quick and easy-to-make dish is low carb and gluten free. It can be served as the main dish or as a side.

Truffle Cauliflower Mac and Cheese Ingredients

Roast The Cauliflower

The cauliflower gets drizzled with olive oil and seasoned with salt and pepper. It is then roasted for about 15 minutes or until just fork-tender.


Make The Sauce

While the cauliflower is roasting, you can prepare the truffle cheese sauce. This recipe calls for truffle zest rather than oil. It is relatively inexpensive.


Mix Cauliflower & Sauce

Gently stir the roasted cauliflower into the cheese sauce. Transfer to a baking dish.


Make The Crumbs

Mix melted butter with almond flour to create "breadcrumbs." Sprinkle over the top of the cauliflower mac and cheese.



Bake for 20 minutes. To toast the breadcrumbs more, you can put the dish under the broiler for a minute or two.
