Cook the bacon until crisp, about 7 to 10 minutes. Remove the bacon and drain all but 1-2 tablespoons of the grease out of the pan.
Cook the potatoes and seasonings in the bacon grease for 2-3 minutes. Add the onion and peppers. Cook a few minutes longer. The veggies will finish cooking in the oven.
Stir the bacon evenly into the vegetables. Form 4 wells in the veggies and crack an egg into each well.
Transfer the pan to the oven and cook until the white of the egg is set and the yolk is still runny, about 10 to 12 minutes. Garnish with cracked black pepper and parsley.
