Cook the onions in olive oil until just softened.
Add the spinach and cook until wilted, then drain well. Return the spinach to the skillet and add the dill, parsley, lemon zest, salt and pepper. Stir in feta and eggs.
Brush casserole dish lightly with butter and add a piece of phyllo dough. Brush lightly with butter and repeat this process with 3/4ths of the dough, one sheet at a time.
Evenly spread all of the spanakopita filling over the phyllo dough in the baking dish.
Layer the remaining phyllo dough over the top of the filling, using the same method as with the bottom layer. Make a few slices in the top to vent. Bake for 1 hour.
