Prepare the cookie dough. Refrigerate for 30 minutes. This step helps to keep the cookies from spreading too much when baking.
Scoop out a tablespoon of dough and roll into a ball. Roll each dough ball into cinnamon and sugar to coat. Place on a prepared baking sheet. Flatten slightly.
Bake 8-10 minutes, or until the bottom edges are just lightly golden brown.
