Potato Frittata

This Potato Frittata is made with diced potatoes, crispy, savory bacon and cheddar cheese, but can be modified to suit your own tastes.  It’s a quick and easy recipe that you can enjoy for breakfast, brunch, or dinner.

Potato Frittata Ingredients

Prepare the Eggs

Whisk the eggs, heavy whipping cream, salt, and pepper together. Stir in the cheese. Set aside.

Cook The Bacon

Cook the bacon until crisp, about 5 to 7 minutes, then remove with a slotted spoon to a paper towel-lined plate. Drain out all but 1 tablespoon of the bacon grease.

Cook The Potatoes

Add potatoes. Cook until fork-tender and starting to crisp, about 5 to 7 minutes. Add shallots and cook another minute or two.

Add The Eggs

Pour the egg mixture over the potatoes. Sprinkle the diced bacon over the top of the frittata.

Bake The Frittata

Transfer the frittata to the oven and bake another 12-15 minutes, or until the center is just slightly jiggly.
