Prepare the cupcake batter with pantry staples and lemon zest and juice from fresh lemons.
Portion the batter out into a mini cupcake pan with mini cupcake liners.
Bake for 15 minutes, or until a toothpick inserted into the center comes out clean.
Prepare the frosting. The frosting is a buttercream with added fresh lemon juice and zest.
Top the cupcakes with the icing using a piping bag and tip, or a butter knife. Add some extra lemon zest, if desired.
