delicious little bites
In a small bowl, whisk the eggs well. Season with salt and pepper and set aside.
Cut tortillas into strips. Fry until crisp, being careful not to burn them. Add the poblano pepper.
Top the fried tortilla strips with the whisked eggs, cilantro and cheese.. Cook until the eggs are just set.
Spread the migas out into the bottom of the pan and top with dollops of the salsa verde. Serve with any additional toppings you desire.
