Season the chicken with salt and pepper. Cook in butter for 3-5 minutes per side or until done through. Remove to a plate and tent with foil to keep warm.
Cook the garlic for 1 minute. Add stock, cilantro and red pepper flakes. Reduce by half.
Whisk in heavy cream and lime juice. Taste and adjust as preferred.
Add the chicken back to the skillet. Coat with the sauce and warm through. Garnish with fresh cilantro.
