Combine mayonnaise, pickles, capers, dill, lemon juice, Worcestershire sauce, and hot sauce in a small bowl and mix.
Combine the flour, garlic powder, onion powder, parsley, paprika, salt, and pepper. Whisk in egg and beer.
Dip each fish fillet into the beer batter and deep fry 3-4 minutes. Drain on paper towels. Spread tartar sauce on a bun, add fish and desired toppings.
